Brut Rosé
DESCRIPTION
Brut Rose has notes of toasty brioche, marzipan, blanched almond and delicate red berry of strawberry and cherry.
WINEMAKING NOTES
Méthode Champenoise Sparkling wine production involves a secondary fermentation in the bottle, followed by subsequent aging on the yeast sediment responsible for the fermentation. 6 years of aging is for the development of aromas and flavors. Riddling and disgorgement follow. Brut Rose is finished with a residual sugar of 0.65/100mL. This Brut Rose brings expression from our light press Pinot Noir lot together with a harder pressing which highlights the varietal berry notes and showing off a bright characteristic pink color.
VINEYARD NOTES
The fruit is hand-harvested and whole cluster pressed. Clone 667 Pinot Noir originated in Dijon, France and has expressions of strawberry and cherry. This Pinot Noir is grown on two of our vineyards. We have a block at our Wild Horse Peak vineyard and one at our Carter Estate vineyard. These two blocks are exposed to small difference in climate and come together to have well-balanced acid and sugar, perfect for sparkling wine production. This Brut Rose is a 50/50 blend of Pinot Noir from our Wild Horse Peak vineyards and Pinot Noir from Carter Estate vineyards.
