Blanc De Blanc is elegant and yeasty with notes of apple and pear.
WINEMAKING NOTES
Méthode Champenoise Sparkling wine production involves a secondary fermentation in the bottle, followed by subsequent aging on the yeast sediment responsible for the fermentation. 6 years of aging is for the development of aromas and flavors. Riddling and disgorgement follow. Blanc de Blanc is finished with a residual sugar of 0.60g/100mL.
VINEYARD NOTES
The fruit is hand-harvested and whole cluster pressed. We have three different Chardonnay clones on our Carter Estate Vineyard: 96, 76, 17. All of these selections originated in France. Each of the three clones have slightly diffferent expressions of classic Chardonnay characters of apple, citrus, and pineapple.
