DESCRIPTION
Brut is rich and classic with notes of pear and pineapple.
WINEMAKING NOTES
Méthode Champenoise Sparkling wine production involves a secondary fermentation in the bottle, followed by subsequent aging on the yeast sediment responsible for the fermentation. 6 years of aging is for the development of aromas and flavors. Riddling and disgorgement follow. Brut is finished with a residual sugar of 0.65g/100mL.
VINEYARD NOTES
The fruit is hand-harvested and whole cluster pressed. There are three different Chardonnay clones on our Carter Estate Vineyard: 96, 76, 17. All of these selections originated in France. Each of the three clones have slightly different expressions of classic Chardonnay characters of apple, citrus, and pineapple. Clone 667 Pinot Noir originated in Dijon, France and has expressions of strawberry and cherry. This Pinot Noir is grown on two of our vineyards. We have a block at our Wild Horse Peak vienyard and one at our Carter Estate vineyard.These two blocks are exposed to small difference in climate and come together to have well-balanced acid and sugar, perfect for sparkling wine production.
